Scallion Chilla (Salty Protein Crepe)

Another super easy quick and tasty nutritious breakfast idea which can also serve as a template to experiment with a variety of flavors. This is a very popular breakfast/snack dish in most North Indian households.

Ingredients
  

  • 1 cup red lentil flour
  • 1/2 cup water
  • ½ cup chopped scallions this is where you can get creative and use finely chopped veggies of your choice
  • Salt to tatste
  • A pinch of asafoetida
  • 2 tsp oil

Instructions
 

  • In a bowl mix the red lentil flour and water with spices and salt. Mix it well so it gets airy and light. Now add the scallions.
  • Add ½ tsp oil on a pan and evenly spread it around.
  • Now add the batter and make it thin just like you would with a pancake or crepe (depends on what you prefer)
  • Let it cook and then flip it.
  • Cook well from both sides.
  • Serve hot with a fresh coriander chutney or a bowl of plain yogurt.
