Scallion Chilla (Salty Protein Crepe)
Another super easy quick and tasty nutritious breakfast idea which can also serve as a template to experiment with a variety of flavors. This is a very popular breakfast/snack dish in most North Indian households.
- 1 cup red lentil flour
- 1/2 cup water
- ½ cup chopped scallions this is where you can get creative and use finely chopped veggies of your choice
- Salt to tatste
- A pinch of asafoetida
- 2 tsp oil
In a bowl mix the red lentil flour and water with spices and salt. Mix it well so it gets airy and light. Now add the scallions.
Add ½ tsp oil on a pan and evenly spread it around.
Now add the batter and make it thin just like you would with a pancake or crepe (depends on what you prefer)
Let it cook and then flip it.
Cook well from both sides.
Serve hot with a fresh coriander chutney or a bowl of plain yogurt.
