Why Beets Are So Healthy (+ Recipe)

Beets are unique in their rich, deep purple color. Not only are they beautiful, consuming them is associated with improved physical performance in virtue of their high nitrate content. Simple Pickled Beets Recipe

Ingredients:

2 pounds, or 3 large beets

1 cup wine vinegar

1 ½ teaspoon Kosher or pickling salt

½ cup honey

1 cup filtered water

Instructions:

1. Wash and halve beets, wrap in foil and roast in 400-degree oven for 40 minutes. Once cooked, unwrap them and allow to cool. Peel and thinly slice.

2. In a small pan, combine remaining ingredients and bring to a boil briefly. Stir to dissolve honey.

3. Arrange sliced beets in jar or cannister, pour liquid over. Cover tightly and refrigerate for a few days before serving.
